Ingredients
Meatloaf Ingredients:
- 2 lbs. ground beef, 85% or 90% lean*
- 1 medium onion, finely chopped
- 2 large eggs
- 3 garlic cloves, minced
- 3 Tbsp. ketchup
- 3 Tbsp. fresh parsley, finely chopped
- 3/4 cup Panko breadcrumbs, or gluten-free bread crumbs
- 1/3 cup of milk
- 1 ½ tsp salt, or to taste
- 1 ½ tsp. Italian seasoning
- ¼ tsp. ground black pepper
- ½ tsp ground paprika
Meatloaf Sauce Ingredients:
- 3/4 cup ketchup
- 1 ½ tsp. white vinegar
- 2 ½ Tbsp. brown sugar
- 1 tsp. garlic powder
- ½ tsp. onion powder
- ¼ tsp. ground black pepper
- ¼ tsp salt
Instructions
Prepare the pan and oven:
- Line a 9”x5” loaf pan with parchment paper.
- Preheat the oven to 375°F.
Mix Meatloaf Ingredients:
- In a large bowl, combine all the meatloaf ingredients and mix well.
Shape and Bake Meatloaf:
- Place the meat mixture in the loaf pan, pressing down gently and shaping evenly.
- Bake uncovered at 375°F for 40 minutes.
Prepare and Add Sauce:
- In a small bowl, mix all the sauce ingredients.
- Spread the sauce over the meatloaf.
- Return to the oven and bake for an additional 15-20 minutes until the internal temperature reaches 160°F.
Rest and Serve:
- Let the meatloaf rest for 10–15 minutes before slicing.
- Drizzle with the baking juices from the pan before serving.
