Ingredients

Meatloaf Ingredients:

  • 2 lbs. ground beef, 85% or 90% lean*
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 3 garlic cloves, minced
  • 3 Tbsp. ketchup
  • 3 Tbsp. fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs, or gluten-free bread crumbs
  • 1/3 cup of milk
  • 1 ½ tsp salt, or to taste
  • 1 ½ tsp. Italian seasoning
  • ¼ tsp. ground black pepper
  • ½ tsp ground paprika

Meatloaf Sauce Ingredients:

  • 3/4 cup ketchup
  • 1 ½ tsp. white vinegar
  • 2 ½ Tbsp. brown sugar
  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • ¼ tsp. ground black pepper
  • ¼ tsp salt

Instructions

Prepare the pan and oven:

  • Line a 9”x5” loaf pan with parchment paper.
  • Preheat the oven to 375°F.

Mix Meatloaf Ingredients:

  • In a large bowl, combine all the meatloaf ingredients and mix well.

Shape and Bake Meatloaf:

  • Place the meat mixture in the loaf pan, pressing down gently and shaping evenly.
  • Bake uncovered at 375°F for 40 minutes.

Prepare and Add Sauce:

  • In a small bowl, mix all the sauce ingredients.
  • Spread the sauce over the meatloaf.
  • Return to the oven and bake for an additional 15-20 minutes until the internal temperature reaches 160°F.

Rest and Serve:

  • Let the meatloaf rest for 10–15 minutes before slicing.
  • Drizzle with the baking juices from the pan before serving.
