Ingredients
- 1 lb. large shrimp, peeled and deveined
- 2 medium sweet potatoes, peeled and diced
- 2 tbsp. olive oil

Directions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
